Roasted Peppers, Onions & Mushrooms

This is a favorite side dish of mine! You can add or substitute veggies to your liking: For these pictures, I used 3 bell peppers (orange, red or combination of the two), 1 sweet onion, chopped & 1-2 packages mushrooms of choice (I typically use crimini & portabello) per tray. Chop, place on baking sheet, drizzle with olive oil & sea salt & bake in 450 degree over for 30-40 minutes. For crispier veggies, bake 25-30 minutes & then broil for just a few minutes.

Sweet & Savory Slow Cooked Chicken

This dish can be made in the oven or slow cooker...Sauce ingredients are not precise measurements but I have made several times & it always comes out good! Ingredients: whole cut up organic chicken plus extra thighs/breasts/drumsticks (total of 3-4 lbs) 1 potato, diced into small pieces caarots & onions (I used 1 sweet onion & 4 large carrots), chopped Organic ketsup, low sodium soy sauce (gluten free if necessary) & brown sugar - amount here is up to you - if you like sauce sweeter, use more ketsup & sugar; for saltier taste use more soy sauce - consistency should be on thicker side (it will get thinner as it cooks) and be just enough to coat the ingredients) Directions: In slow cooker: ad

Zucchini Noodles Marinara

My new favorite kitchen gadgette is the Veggetti (inexpensive and can be purchased online or at Bed, Bath & Beyond)! This is a delicious side dish - you can even add chopped ground turkey, chicken or beef and make it a main dish! For 2 servings: Take 4 whole zucchini & follow directions on the package to make them into noodles. Place in boiling water for approximately 5 minutes. Drain & add sauce ( for the sauce pictured above, I used POM diced & strained tomaotes, pinch of sea salt, 1 tbsp butter, 1 tbsp coconut milk).
