     Awareness of gluten sensitivity or intolerance, as well as Celiac Disease (CD) has commanded a lot of attention in recent years. This is because more people are realizing they may have an issue with gluten, a protein found in wheat, barley, rye & some oats, as well as in many processed foods, condiments & packaged goods found at the supermarket.

     CD is an autoimmune disease where the ingestion of gluten causes the small intestine to attack itself, resulting in severely damaged intestinal mucosa. It is now believed to be one of the most prevalent lifelong disorders. Proper diagnosis can take 5-10 years (and several doctors) and there has been a large increase of diagnoses in children & adolescents. Often, people have silent or latent CD or gluten sensitivity for years before it becomes apparent. Regardless of having CD or not, gluten can be extremely problematic for many individuals. Inflammation in the body, as caused by gluten in many individuals can cause other problems to manifest, including neurological, gastrointestinal and even dermatological.
