Creamy Shredded Brussel Sprouts Salad

This is the perfect side dish for a holiday & goes great with leftover turkey. Feel free to add some dried cranberries for color & sweetness!



Ingredients:

  • 2 tbsps Extra Virgin Olive Oil

  • 1 tbsp Apple Cider Vinegar

  • 2 tsps Dijon Mustard

  • 1/4 cup Plain Greek Yogurt (optional if you want dressing creamier)

  • 2 tsps Choc Zero Maple Syrup

  • 4 cups Brussels Sprouts (shredded & briefly sauteed )

  • 1 Apple (cored and thinly sliced)

  • 1/3 cup slivered dry toasted almonds (I use Trader Joe's)

  • Fresh Parmesan Cheese (optional)


Directions:

In a bowl, combine the extra virgin olive oil, apple cider vinegar, mustard, yogurt & syrup. Mix well and set aside. Add the sauteed brussels sprouts to a bowl and pour the dressing over top. Add the apple, cheese and almonds then toss well to coat. Enjoy!
