Sweet & Savory Slow Cooked Chicken
This dish can be made in the oven or slow cooker...Sauce ingredients are not precise measurements but I have made several times & it always comes out good!
Ingredients:
whole cut up organic chicken plus extra thighs/breasts/drumsticks (total of 3-4 lbs)
1 potato, diced into small pieces
caarots & onions (I used 1 sweet onion & 4 large carrots), chopped
Organic ketsup, low sodium soy sauce (gluten free if necessary) & brown sugar - amount here is up to you - if you like sauce sweeter, use more ketsup & sugar; for saltier taste use more soy sauce - consistency should be on thicker side (it will get thinner as it cooks) and be just enough to coat the ingredients)
Directions:
In slow cooker: add all ingredients, cover with sauce & cook on low for 6-7 hours or high for about 5 hours
In oven : Prheat to 450 degrees & place chicken alone in baking dish. Drizzle some olive oil & any seasonings you choose (I use garlic & parsley). Cook for approximately 20-30 minutes until top of chicken is starting to brown. Add veggies, a little more olive oil & continue to bake for 30 minutes. Add sauce, lower oven to 400 degrees and cook for another 30-40 minutes (sauce should be bubbbling slightly). Cover dish, reduce heat to 350 & continue cooking for another hour or more. It is done when chicken is cooked through & comes off the bone easily. You can cook as long as you want covered - the longer it cooks, the more easily chicken will pull apart.
Can serve on its own or with some additional roasted veggies! This is a great dish for a holiday meal!!
