Sauted Scallops & Peppers with Air Fryer Zucchini & Eggplant
Rinse & pat dry Sea Scallops. Toss in some olive oil, garlic & salt. Add 1-2 tbsp butter to saute pan. Heat & cook scallops, approx 3 min per side. Add peppers, lower heat & saute until desired tenderness. In meantime. Toss zucchini & eggplant in some olive oil, garlic & salt. Place in air fryer, set at 400 degrees & cook 15-18 min, tossing every 5 min.
4-5 scallops per serving, along with1-2 peppers, 1/2 zucchini & 1/4 large eggplant per serving.
