Chocolate Coconut Protein Loaf
Ingredients:
4 large eggs
1 cup (equal to one small container) nut butter - I used Barney Cocoa + Coconut Almond Butter
1 medium banana or 1/2 large banana
1/2 tsp baking soda
1/3 cup cocoa powder
2 scoops Perfect Hydrolyzed Collagen or 1 scoop chocolate protein powder + 1 scoop Collagen
A few pinches himalayan or sea salt
Dark chocolate chips (optional)
Directions:
Preheat oven to 350 degrees. Mix eggs & baking soda with hand-held blender, approximately 1 minute. Add remaining ingredients and mix well. Pour into parchment paper lined loaf pan OR use muffin pan & fill 1/2 way in each cup. Bake for approximately 30 minutes. When done can add some chocolate chips on top.
Makes 8-9 slices or 12 medium sized muffins. Each serving contain approx. 250-275 calories, 14g protein, 13g carbs, 5g fiber, 4g sugar, 18g fat
