Slow Cooker Chicken Sweet Potato Soup

This easy recipe is light & filling with tons of protein and fiber, vitmains A & C.


1-1 1/4 lb organic chicken breast

32-40 oz. organic low sodium chicken/bone broth or stock

1 container Pomi chopped tomatoes

1 small onion, chopped

1 large sweet potato, peeled & chopped

Yellow or green string beans, fresh (quantity is your choice but approximately 3-4 cups)

Himalayan salt to taste


Place all ingredients in a crockpot & set for 5 hours on High. After 4 hours, remove chicken & shred. Return shredded chicken to the crockpot and cook the last hour on low. Makes 4-6 servings.
