This guiltless dessert can be shared. However, wth under 300 calories & 12g protein, it could also be a breakfast for one ! I found a version of this recipe on the leangreenbean.com - great website!
1/4 cup mashed sweet potato
2 tsp cocoa powder, unsweetened
1 tbsp brown sugar
1 tbsp peanut butter
1/4 tsp baking soda
1 large egg
dark chocolate chips (about 8) - optional
In bowl, mix sweet potato, brown sugar, cocoa powder & peanut butter. Then add egg & baking soda. Put into microwave safe mug sprayed with cooking spray & microwave for 90 seconds. When done, remove & add chocolate chips to melt on top if desired.
