Protein Bars & Bites
These easy to make, gluten free protein bars & bites are a great snack or pre/post workout meal.
Cookies & Cream Protein Bars:
1/2 cup Coconut Flour
1 cup Gluten Free All-Purpose Flour
1 cup Organic Quinoa Flour
1/2 cup Organic Maple Agave Pancake Syrup (Madhava)
1/2 cup Peanut Butter
1/2 cup Vanilla Protein Powder (I used Garden of Life Organic Plant Protein, Smooth Vanilla)
4 cookies of choice (i used GF chocolate sandwich cookies), crushed
Approximately 1/2 cup Unsweetened Vanilla Almond MIlk (start with 1/3 cup & add more slowly until mixture is moist and no longer crumbly)
MIx flours (can use what is listd above or 2 cups all purpose or flour of your choice, along with 1/2 cup coconut flour), protein powder & crushed cookies in a large bowl. Melt agave syrup & peanut butter together in small bowl & then add to the dry mixture. It will be crumbly. Then add & mix in the almond milk until it is moist. Place in a pan, greased & lined with parchment paper & spread mixture evenly. Place in refrigerator for at last 1/2 hour & then cut into squares or bars.
Triple Chocolate Protein Brownies:
2 medium very ripe bananas, mashed
1/2 cup butternut squash puree
1/2 cup chocolate peanut butter
3 tbsp unsweetened cocoa or cacao powder
1/2 cup (1-2 scoops) chocolate protein powder (I used Garden of LIfe Plant Protein in Chocolate)
2-3 tbsp dark chocolate chips
MIx all ingredients in a blender, then place in greased pan lined with parchment paper & bake in 350 degree oven until it is set (about 20 minutes). Let it cool completely or refrigerate before slicing. If necessary, can place a tbsp or 2 of almond milk in blender the get ingredients to mix well.
Coffee Chip Protein Bites:
1/4 cup coconut flour
1 scoop Coffee flavored protein powder (Garden of Life Plant Protein in Smooth Coffee)
4 tbsp Barney Almond Butter (Vanilla Bean Espresso Flavor)
1-2 tbsp agave or maple agave syrup
Approximately 1/4 cup unsweetend vanilla almond milk
2-3 tbsp dark chocolate chips
Mix flour & protein powder. Melt nut butter & syrup & then add to dry mixture & mix well. Add chocolate chips & mix. Slowly por & mix almond milk until everything is moist (use more liquid if necessary). Form into balls & refrgerate on a lined cookie sheet or pan.
