Creamy Corn Pudding
Gluten free & absolutely delicious! Not the healthiest but an indulgent side dish...
2 cans cream corn (I used Libby's but make sure it is a GF brand)
2 cans whole kernal corn
8 oz. whipped cream cheese
6-8 oz. shredded cheese (I used Horizon Organic Mexican Blend)
1 cup crunchy cereal, crushed) I used GF Special K Protein with hint of Brown Sugar
2 tbsp butter, melted
1-2 tbsp corn starch
Mix the corn, chream cheese, corn starch & shredded cheese in a baking dish (1 13x9 or 2 9 inch round pans) & cook in 375 degree oven, approximately 45 minutes. If using the topping, mix the crushed cereal with the melted butter, sprinkle on top of the corn pudding and bake an additional 10-15 minutes. Let it set & ready to serve!
