Double Chocolate Chip Muffins!

Full of chocolate! And full of nutrients - all while being gluten free and so easy to make...

Ingredients:

1 large sweet potato, peeled & cooked

1 large ripe banana

2 eggs

1/4 cup nut butter (peanut butter or a flavored almond butter work well)

3-4 tbsp applesauce

1-2 tsp. cinammon

1-2 tsp vanilla extract

1/2 cup chocolate chips

1-2 tbsp cocoa powder (to make double chocolate muffins)

1-2 tbsp agave or maple syrup (optional but good for some added sweetness)

Directions:

Preheat oven to 375

Grease muffin or mini muffins tins with butter or oil spray (I used coconut oil)

Mash sweet potato & banana well

Next, add nut butter, eggs, applesauce, cinnamon, vanilla, cocoa powder; if you want it sweeter, add the agave or syrup

Lastly, add chocolate chips

Fill muffin tins & bake for 15-20 minutes

Makes approximately 16 mini muffins or 8 regular muffins
