Simple Baked Chicken with Roasted Apples & Brussels Sprouts

Serves 4


2 lbs chicken pieces

24 oz. sliced brussels sprouts (2 pre-sliced packages)

2 medium apples, sliced

1 onion, chopped or diced

4 tbsp olive oil

1/4 cup apple cider or balsamic vinegar

1-2 tsp dried parsley

Sea salt to taste (approx 1/4-1/2 tsp)


Preheat oven to 425 degrees. Place chicken in a roasting pan & drizzle 1 tbsp olive oil, pinch of sea salt & parsley. Add brussels sprouts, apples & onions to the pan. In small bowl, mix remaining 3 tbsp olive oil, vinegar & remaining sea salt. Pour into pan & toss to coat. Cook approximately 30 minutes - if chicken is cooked through, set oven to broil for 3-5 minutes & remove the pan when the top of chicken & brussels sprouts are browned.
