Cheesy Spaghetti Squash Primavera (with Mini Chicken or Turkey Meatballs)
This delicious dish is worth making! Full of flavor & very filling...
Ingredients:
1 spaghetti squash
3-4 handfuls chopped fresh spinach
1/2 cup diced onion
1 cup diced mushrooms (any variety)
1 tsp minced garlic
1-2 tbsp olive oil
1/4 cup shredded cheese - mozzarella or parmesan
For meatballs:
1 lb. ground turkey or chicken
2-3 tbsp ketchup
1/4 cup gluten free panko or Italian breadcrumbs
1-2 tsp each dried, minced onion & parsley
Directions:
Preheat oven to 450 degrees. Put spaghetti squash in microwave for 5-6 minutes (so it's easier to split in half), split squash in half & then scoop out seeds. Place each half faced down on a baking sheet & bake approximately 40 minutes (or until squash is soft & cooked through). While that is cooking, saute minced garlic & onions in 1 tbsp olive oil. Once slightly browned, add mushrooms & spinach - use remaining 1 tbsp olive oil if necessary. Cook until soft, approximately 3 minutes. Set aside. Once squash is cooked, scoop out of shell and place in saute pan, along with the cheese & cook a few minutes until cheese is melted or cooked into mixture.
If making the meatballs, mix all ingredients & form small meatballs. Place in boiling water until cooked through, approximately 10-15 minutes. Add to spaghetti squash mixture.
