Sea Bass with Fresh Summer Salsa...
This is a flavorful & easy to prepare summer meal...serves 2:
2 pieces chilean sea bass (6-8 oz/each)
2 tbsp olive oil
sea salt & dill to taste
1 cucumber, peeled & diced
1 mango, diced
10-20 grape or cherry tomatoes, sliced
juice of 1/2 lime
1 tbsp. of honey or agave
Bake, broil or grill (on cedar planks or directly on grill) the sea bass, marinated in the olive oil, dill & sea salt. While it is cooking, combine the cucumber, mango & tomato. Squueze the lime juice over the mixture, add the sweetener & a little more sea salt if desired. Toss to coat & refrigerate until fish is ready. Place on top of the sea bass & serve!
