Grilled Zucchini with Yogurt Dill Dipping Sauce


Perfect as a side dish or appetizer, served hot or at room temperature...

Ingredients:

1 each, large yellow squash & green zucchini, cut into 1/2 inch slices

2-3 tbsp. olive oil

1 tsp. miced garlic

sea salt to taste

5-6 oz. organic, plain greek yogurt

1-2 tsp. dried, minced onion

1-2 tsp. dried or fresh dill

Directions:

In small bowl, place olive oil, garlic & sea salt & microwave until hot, 20-30 seconds. On grill or in a grill pan, use cooking spray just to lightly coat & heat pan or grill. Dip zucchini/squash slices in the hot garlic oil & place on hot grill. Turn over when browned & repeat for the other side. Can blot some of the oil by placing on plate, between paper towels once removed from the grill. To prpare dip, combine dill, onion & yogurt in a bowl & mix.

This can also be done with eggplant slices. However cooking time will be longer for the eggplant.
