These blondies are gluten free & delicious...
1 15 oz. can chickpeas, rinsed & drained
1/2 cup peanut butter (or nut/seed butter of your choice)
1/3 cup honey (can also use maple syrup)
2 tsp. vanilla
1/2 tsp. salt
1/4 tsp. each of baking powder & baking soda
1/3 cup plus 2-3 tbsp. dark chocolate chips
sea salt (optional) to sprinkle once baked
Preheat oven to 350 degrees. Spray 8 x 8 in. pan with cooking spray. Place all ingredients except chocolate chips in blender or food processor & blend until smooth (batter will be very thick). Fold in 1/3 cup of chocolate chips (reserve the rest). Spread batter evenly in pan & sprinkle remaining chocolate on top. Bake for 20-25 minutes; batter may look undone but that's ok - don't want it too dry. Cool for 20 minutes & then cut into 16 squares.
