An easy, 2 ingredient turkey burger that is filling and delicious!
1 lb. ground organic turkey (I used 94% lean)
1 medium to large sweet potato, peeled & cooked
1 tsp dried parsley
1 tsp minced dired onion
salt & pepper to taste
1-2 tbsp oil of choice (olive or coconut)
Mash sweet potato i a mixing bowl. Add ground turkey & spices and combine to form small burgers (should make 6 burgers). Heat oil in pan & cook on medium heat, 3-4 minutes per side until cooked through. Serve on a lettice bun or over a salad. Can add sliced tomato, mashed avocado or mushrooms & onions if desired.
