This delicious pudding is high protein & fiber and low in sugar & calories. Can be eaten as snack or dessert, is naturally gluten free & can be made nut & dairy free!
- 1 cup unsweetened vanilla almond or coconut milk
- 4 tbsp. chia seeds
- 2/3 cup cacao or cocoa powder
- 1 frozen banana
- 1/4 tsp. vanilla extract
- 1 scoop collagen or unflavored protein powder (optional, however adds good amount of protein & minimal calories if collagen protein is used)
- himalayan salt to taste (a few pinches definitely needed)
Place all ingredients in a nutrabullet or blender until smooth. Divide into 4 dishes & refrigerate for 1 hour. Can add fresh fruit or a little whipped cream to serve if desired.
Makes 4 servings & is approximately 130 calories, 6 g fat, 20 g carbs, 11 g fiber, 5 g sugar, 8 g protein
