Pre & Post Workout Snacks: Zesty Lemon Energy Bites, Cake Batter Protein Bites & Double Chocolate Covered Almond Butter Bites

Zesty Lemon Energy Bites: 1 1/2 cup almond flour, 1/3 cup coconut flour, 1/2 tsp pink himalayan salt, 1-2 tbsp. agave or maple syrup, juice of 3 lemons, 2 tsp vanilla extract, 1/4 cup melyed coconut oil. Place all ingredients in blender & mix well. Roll small spoonfulls into balls & place in refrigerator for at least 5-20 minutes. Can also roll them in coconut flakes or powdered sugar for added sweetness. Store in refrigerator. Makes about 25 energy bites. Each bite is about 65 calories, 5 g fat, 4 g carbs, 2 g fiber & 2 g protein.
Cake Batter Protein Bites: 1/2 cup vanilla protein powder (Garden of Life Organic Plant Protein in Smooth Vanilla is my choice), 2 tbsp coconut flour, 1 tbsp melted coconut oil, 1 1/2 tbsp agave or maple syrup (I use Madhava Agave Maple Syrup) & approx. 8 tbsp water (if mix is too dry add more water). Mix all ingredients, roll into balls & keep refrigerated. Makes about 10 protein bites. Each bite is about 50 calories, 2g fat, 4g carbs, 1.5g fiber, 3g protein.
Double Chocolate Covered Almond Butter Bites: 3/4 cup + 2 tbsp softened almond butter (I used Barney Butter Crunchy), 1/4 cup agave or maple syrup, 1 tsp vanilla extract, 2/3 cup almond flour, 3 tbsp unsweetened cocoa powder, 6 tbsp semi-sweet or dark chocolate chips, 2 tsp water. Adding chis/flax seed blend is optional. Mix all ingredients together, roll into balls & place in refrigerator. Makes about 10 proten bites. Each bite is about 108 calories, 8g fat, 8g carbs, 2g fiber, 5g protein.
