Savory Vegetable Soup

If you can find packaged soup greens & veggies at the supermarket, you can make this creamy vegetable soup easily!

Ingredients:

- 3 cups of low sodium chicken broth (I use 2 cups bone broth & 1 cup regular broth - bone broth has lots of protein & health benefits)

- 2-3 large carrots, chopped

- 1-2 parsnips, chopped

- 1/2 onion, chopped

- 1-2 celery stalks, chopped

- Fresh parsley & dill

- 1-2 tsp. coconut oil

- Sea salt to taste

Directions:

Bring all ingredients except the coconut oil to a boil. Lower heat, cover & simmer until vegetables are soft. Tranfer soup, along with the coconut oil to blender but start with half the liquid (add more after you start blending to achieve your desired consistency). Can add some fresh dill & crushed walnuts for garnish!
